First of all I'm new to this site (been on TFF a few times) as well as being new to deer hunting- I normally bass fish year round but wanting a change of pace.
After being married for 13 years I found out we have access to some property in Medina County Tx, (wife's grandfather). With that said I have made a couple trips out there (one last year) and 1 this year (which yielded my first buck ever, a nice 8 pt (as well as my first deer this season). Learned to gut it and then sent to Dzuiks in Catrosville for processing.
I have read many helpful articles and viewed many NICE pics on this site. I usually borrow a gun to hunt with and each have been Rem .270 but recently picked up the Stevens model 200 .270 at Academy and added a Pentax 3x9x50 scope onto it. I realize this is nothing compared to many other outfits yet it is an entry level combo for my entry level self :P.
So, onto the questions (hope y'all don't mind).
- Do the antlers must reach outside the ears in order to be a legal buck? (I may have misunderstood the TPWD book).
- I see an Euro mount is scull and horns only. Does this need to be sent to a taxidermist and if so, how much does it cost (ball park) for this type of mount?
- Hogs. What size is best to eat? Should I attempt to gut one or do I send the whole thing into the processors and let them do it?
- I've seen many trails where we hunt both cattle, deer and hogs. How do I determine which trail is better than others?
- There are bobcats out there too - is there s special stamp or anything on these or just shoot it if I see it?
There are many more questions I havea s well however I want to be sure I am hunting wihtin the laws (cannot stand poachers).

Welcome Swimbait, "outside the ears" is used as a guide. The rule is 13" inside spread.
Euro mounts can be done at home or by the taxidermists. I paid $85 to get mine done a couple of years ago and he did alot better job than I could.
On hogs my personal experience has been 200 lbs tops and sow are better than boars. I would definitely gut any animal that I harvested as soon as possible.
Trails you just have to look at the lay of your land and scout. Food and water sources as well as bedding areas all play into it. Remember to keep the wind in your face or at a cross to the trail your hunting. Sun should be considered too, its better to have it in their eyes than yours.
A hunting license is all you need for bobcat unless you plan to sell the fur and then a trappers license is required.

The 13" rule (outside the ears) applies to counties which have Antler Restrictions. Medina County is not one of these.
I also note that in Medina County the dates for deer season are slighly different and the limit is slightly differenct depending on whether your place is north or south of highway 90. See page 84 of the "Outdoor Annual".

Also, the 13" rule is only in effect in some counties. Check the rules before hunting a place. Not knowing can be expensive.
The hog size debate goes on.... smaller ones are more convenient, and I like to smoke them whole on the big grill, but I've had a lot of larger ones processed and they have been great (and I am picky... not into 'gamey meat). Love to have larger ones cut onto chops and have a big batch of sausage made up. Once in a while I guess you can get a really stinky boar, but just use the sniff test.... I've eaten every hog I've taken, or given the meat away if my freezer's full.

want to add this...medina county(depending on if your north or south of 90) can be either good hunting or pretty sorry, depending on where your at...but if your in a good area consider yourself very fortunate.
the best way to learn is to hang around more experianced hunters, i have read countless books and magizine articles but nothing beat my time in the field around experianced hunters.
also, as far as your rifle selection...a .270 is going to be hard to beat, i've used on as long as ive been hunting, and haven't had a problem...that said, if your planning on staying in the game, i'd move up to a remignton 700 or the like, you'll get more enjoyment out of it.
its like fishing with a zebco and moving up to a shimano.
For it is not the quarry that we truly seek, but the adventure.

Much appreciation for the reposnes thus far. From what I've seen / read, this site is just as informative with hunting as TFF is for fishing. The place I hunt is South of US 90 (near Yancey). I've only been ince thsi year and hunted a Wed evenign to Fri evening. The Buck to doe ratio was about 2.5 to 1. I had let some bucks go as I thought the rule was outside the ears. Most of the bucks were 4-6pts and only 1 was a big bodied 4pt. I did see several bigger bigger bucks but due to me being a newb, I could't get a good shot on them (another new story I'll spare you from). I did end up shooting the 8pt from about 150yds. Hit the Femur artery but, heck he died and I got a rack and a freezer of meat  . From wht I read, Medina does nto have antler restictions so does this mean I could have saved a day of hunting and gone home early (thus missing out on the 8pt)? Just need help clarifying some of the vague verbage TPWD prints. I suspect cleaning a hog will be the same as a deer but there's a "musk" sack I need to be concerned with? We are planning another trip out there on the weekend of the 16th. I do plan to have the gun sighted in by then (bore sited atm)and hopefully fill out the tags. Talked to our g-pa today and he had other family memebers out there. A couple hogs and 3 deer were taken yesterday and tody with one deer being another 8pt buck (others we doe I believe). For future reference, I will read online how to perform my own euro mount. But $85 for a mount vs hundreds sounds good (unless I get lucky and bang a real nice one). Welcome! Since it is not an AR county you can shoot any buck you want. No size restrictions. I noticed you said bore sighted. That is used to just get you hitting paper. You still need to sight it in better at the range. Good luck.

You may already know this, but just to clarify a bore sighted is in no way ready to hunt with, it's just a starting point from which to get it zeroed. Just wanted to make sure.

yeah you definatly need to sight in, bore sighting is just a real rough way of getting it to hit paper, but it can be many inches off from your point of aim....for every inch its off at 100, double it for 200 etc.
family used to have a place around yancey, can be a good area, definatly alot better than castroville/devine area.

This is wrong. I have a Marlin XL7 and a Remington. I love the XL7 and have a ton more confidence than I do with the Remington. So, I get a LOT more enjoyment out of the Marlin, which is a lot cheaper than the Remington. if you shoot well with your Stephens, then its fine. A lot of people are a lot more concerned with impressing other posters than they are with actual performance.

The best source that I have found for learning about deer behavior is Deer and Deer Hunting magazine. Nothing else comes close in my opinion.

First of all thanks for the replies all information helps.
1. Zebco to Shimano: I can relate with this theory and also undertand what shoots well (or best fit ie Affordability and effectiveness). I haven't shot the Stevens yet but plan to site n this week. I figure the diff could be between weight, recoil, feel, durability, etc..
But, I am one who will not out of my way to impress others with "Bling" - seen in the tourney scene waaay to much.. my intial reposnse, "That looks nice" ... simply not worth to look, act, and pretend to be somethign that one is not.
I do have frineds that have hunted all their lives and have some very hand crafted high end rifles that I would have to wash my hands first before I touched lol.
2. D&D Magazine, I will look for.
I am doing some research on food plotting, trail, scrap, rubs, Euro mounts, etc so I can become familiar with all this.

I would upgrade the scope way before you upgrade the gun. Good optics make a huge difference. Kind of like with fishing I spend more on the reel than the rod.

Good info above. As for size of hog, I've never found one too small or too big to eat. I've loved 'em all.

CAn anyone recommend a link or vid that diplsys the proper way to quarter / store the deer for travel (about 2.5 hour drive).
We are planning to head down to the ranch next week after wrappign up some boat details.
This itme I would probably like to bring hte deer and or hog back up to Austin area and have it processed there.
