Did this for Christmas dinner .Take a loin and butterfly it season then take some boudian out of the caseing and put it in the loin and close it up.I then wrapped the whole thing in bacon and threw on the smoker till internal temp was 170 .Mighty fine .We hunt hogs with dogs alot here and we killim and cut the loin out and this is one of the best ways to have a great meal out of them nasty pest.Darrell
