You get any beaver I'm intersted! I gring it up and it makes a mushy burger (have to remove a lot of tendons from the gringer), but fries up nice. I call them fur burgers.

Drive thru goodlow, 1 Mile south of kerens tx. Them folks will take hogs, big gator gar, COONS, and pretty much any meat u got. They stay under the tree by the beer store..... haha goodlow is to far 4 that. Go to the carwash on mlk blv next to the diamond shamrock. You can trade 4 anything but wear leather gloves.

You might check with Lonnie Allsup, they will put just about anything in them burritos. Ever see any roadkill in New Mexico? You won't, Allsup's has the contract for it.

We'd sautee' them in Jack Daniels when we went to summer camp at Fort Hood when I was in the National Guard. Raccoons have really red meat and the one's down there are kinda greasy but they really are good to eat.
Just FYI, not sure if Jack and coon qualifies as a recipe but you can always drink the Jack if you don't like the coon.

i havent caught many grays. but i dont i dont target them either. they were were bringing around $10. i try to target mostly cats and coons. cats bringing $30.

Armadillo meat will surprise folks who haven't tried it. Once you cut away the layer of fat between the carcass & the shell, the meat's pretty darn lean. Soak it overnight in buttermilk, then barbecue it. Pretty darn tasty. Just try not to think of how the underside smelled while you were skinning it! 5% of the armadillo population have leprosy

Put the coon in a pan with lots of peppers and onions and the meat is real good. we take the coons and cook them on a pit for about 12 hrs at 250 degrees. Wade....WHY!....does this not surprise me!!!

In the 60's and early 70's we would hunt with dogs catch and shoot alot of coons.
I cooked them, and they were good. (The younger ones are better). Not as much fat and not as strong flavored.
We would skin them, and let them hang over nite.(45 deg or cooler).
Next morning wash them , cut up into pcs, like chicken. Soak in a bowl of sweet milk all day.
Use salt ,pepper and garlic and season the meat, roll in crushed corn flakes, and fry just as chicken.
Its good, Its not as fat as bear meat, but almost the same taste....!!!!

I have a recipe from an old South Texas Hispanic on how to cook them. It uses mostly tequila for a marinade. Once you clean the coon you salt and pepper to taste. Rub a bit of chili powder on the skin. Get the tequila. Take eight shots maybe ten - sit for four to six hours till hungry. Once that happens take four more shots. Wait two more hours. Deep fry that animal in chocolate sauce and maybe then you will be marinated enough to enjoy it.

I love to give them a soak in some milk. Then put it in a roasting bag with some potatoes(or sweet potatoes), onions, carrots, celery, and some bar-b-q sauce and bake it.....now that is some good eatin'.
Also if you grill it is makes for some really good eatin.
I mean come on....why do you think I coon hunt. =P

Wife also mades some excellent tamales with chunks of coon meat seasoned and boiled with Wick Fowler Chili mix.
