What's the difference in taste and texture between young bison, year or two old bison and "trophy" bison when it comes to meat? Any difference in taste and texture between bulls and cows?

It is not much different then beef would be as they are both in the bovine family. A young bull or calf and a not too old cow are more tender then an old bull. Also if the bulls are in their breeding season the increased testerones and adrenaline levels can alter the taste of the meat in a negative way. The taste of the meat also depends heavily on what the animal is eating. Cornfed animals always taste better and less gamey then grass eating animals. That's the very same reason cattle spend a couple of month at a feed lot and get fed high quality food. It's to improve the taste of the meat.

Points to consider:

Age of animal. The younger the more tender the meat.
Food intake. Corn fed animals taste better then grass fed ones.

the cow I shot was between 1000-1200lbs. she taste awesome. got over 600 pounds of meat back from processor and again the meat taste great. I will shoot a buffalo every year now.

Thanks very much. I am more interested in the meat than the size of body or trophy quality so I'll shoot a young cow or yearling.

I killed a 3 year old cow earlier this year and got about 350 lbs. of meat. I like it way better than beef and it's much healthier. I expect to get another one around March/April timeframe.

I booked with TARSPORTING. They have me going to a place 30 miles West of San Ant. 2 1/2 days with lodging for $675 for a one year old bull or cow, my choice.

got my meat back. almost 700 lbs of meat. Man have been eating steaks for last 2 days and they are awesome.

great price..mine was 800 also includes lodging and cleaning.I was able to shoot any size I wanted. Plus I gave guide a tip so it was more.

it was a blast. processor guessed her close to 1200. they have a few smaller 800 pounders and several that are bigger than mine. they just brought in several more. I took her with bow. shot her 2 times,both lung heart shots with blood pumping out and still took an hour to die.

Do you get choice of what to shoot? Good accomadations? Friendly? How did you have your buff processed? Good price?

yes I chose the one I wanted. Accomodations are great.they dont provise food though, you bring your own. Guys are awesome and very friendly. I had it done basically just like a cow. I got ribs,ribeye,NY strip,hamburger,german sausage,roast and chicken fried.

I can't find the prices on the rocky ridge website, can you give me a ballpark price? Was your 800 a special rate or regular? When did you shoot yours?

I'm not calling you a liar or anything.....you might just be exagerating a little. But there is no possible way to get 700 lbs of meat off a 1200 lb buffalo. Just the guts will be about 25-30% of the total weight......minus the hide, head, and bones which probably account for an additional 40-50% of the total weight. I shot a 1200 lb bull a couple years ago and maybe got 300 lbs of trimmed, deboned meat off him. That's with no bones. Maybe your counting the bones in the weight??
