I was wondering if anyone could help me find a good processor in the Tyler area that makes good jalapeno cheese sausage links and summer sausage. I have a local processor I usually use, but I was not too impressed with their sausage. If anyone knows one, I sure would appreciate it. Thanks.

I have used Santo's in Athens for several years and have been happy with them. It is next to Whataburger.

those are your only 2 choices in tyler, lynchs you have to bring your deer in quartered, but he is the man.
If you don't want to do all the work country meat market is your only option, when its hot like it has been I take my deer to country meat market if its cool out I do all the work and go to Lynch's.

Santo's in Athens is awsome...but a bit pricey. But well worth it.
Lynch's used to be Whitikers.
Havn't heard good things about Country Meat Market either. Sounds like they need to step up.
Think A&B meat market just does pigs now. IDK?
Heard of a guy in Troup. Adams processing...Maybe? Would like to know more about this guy and what he offers. Prices, cuts Phone # and so on.

Thanks for all the feedback. I also heard of a place just north of the loop in Tyler off of Hwy 14, I think it is called Jim and Buddys...the guys name is Jim Tidwell and I heard excellent things about his sausage and him as a person. Anyone ever heard of them? As far as Country Meat Market is concerned, the only problem I had with them was the jap/cheese smoked sausage was not all that good and on 2 occasions, I asked them to package up my hamburger in 1 pound packages and both times they said they would and did not. The packaged them in 1 1/2 pound packages. Everything I cook deer hamburger with calls for 1 pound increments. They just did not do what I asked and Im probably done using them.

Lynches where Whitakers was for years is good and tenderize he use to own A& B food store and sold out and bought Whitakers. Also heard the new oners are crappy at A&B now.Country Market is okay if you talk with the big guy with curly hair not the peons.Reds in Canton is good.As far as the place in Troup i would pass on them (ADAMS)Not very clean and have seen hos in mid summer hanging outside and go back by their in a hour or two and still hanging.NO WAY.

Thanks billy....that's some good info there. Looks like it will be lynches or Santo's for me. Does Lynches process pigs? Any info on the place on hwy 14? I used to process my own...but just finding time to do it. Plus it's harder to find fat anymore. They just don't want to sell it to ya. Granted you will get more meat if you do it yourself. But cost of ingredients plus time works out to be cheaper to have someone do it for ya. just my 02

Anyone ever use The Beef Shop in Mineola? Are they any good. Know of another processor north of Tyler in the Mineola, Lindale area?

If you don't mind driving out towards to Troup on HWY 110 you can go to Carnes Packaging and Country Store they process deer and we have used them numerous times and had good luck. Their address is 20601 Highway 110 South, Troup, Texas 75789

I won’t be going back to Country Meat Market. I’ve heard good things about Circle M Processing but haven’t tried them yet.
