Since Hurricane Harvey haven't been cooking much due to being busy, but I have fired up my disc a few times for some quick meals. Nothing pretty but sure was good.... Chicken fajitas & sausage, always quick & easy... This is always a big hit with everyone. Bacon, smoked sausage, chorizo, potatoes, onions, garlic, jalapenos, bell pepper, and a little fajita seasoning. Add some eggs to the leftovers the next morning and get down! My favorite, pastor! Had to throw a little shrimp boil in there, it was attacked and disappeared quick.

Got me a new 15 gallon pot & was gonna cook a gumbo for the neighborhood but ran out of time. Will do later. Took a little break from this.... ...and cooked up some tripas. Hmn.

Clean and crispy, just the way I like them with toasted corn torts & a little salsa. So many things to cook, so little time.....

Everything you make looks fantastic, Skinner...I've been living in a hotel for a few weeks now and I am SICK of eating out. Very little good food over here in New Port Richey, Florida.

Thanks MD, man I know that feeling. I've spent a lot of time in hotels working on the road too and got sick of eating out. A crock pot and small convection oven became my friends. I created all sorts of concoctions cooking in hotel rooms. I've never been to that part of Florida....

Boiled until tender (I rinse them out first) and then fried in their own grease. If you like livery things (I do) you'll probly like them.

I'm switching hotels on Friday to the hotel my coworker is staying in across the street. He has a mini kitchen in his and we are going to start cooking dinners. Looking forward to it!
