Cooked up some of the sockeye I caught last week with a lemon herb risotto and bok choy. I could get used to this

Outstanding. I would tear that up Specs on the risotto? Never have made that but have always wanted to.

Outstanding. I would tear that up Specs on the risotto? Never have made that but have always wanted to. Thanks, love the stuff. Sweat half an onion in olive oil and butter then add arborio rice until hot, slowly add chicken stock, just enough to cover rice, cook on medium heat stirring frequently and adding more stock as needed for about 10 mins. Add herbs, used fresh oregano and rosemary for this, and the zest of one lemon. Grate a good amount of parmesan and add a tablespoon butter, more stock if needed until cheese in incorporated.
