Tried to brine a good size piece of hind quarters from a big boar we took a few months back. Its been in the brine for several days. Threw it on the grill to sear and infuse with some smoke flavor. Man it stinks! Strong smell that is not appetizing. Its official, I thought there was a ton of misinformation on the web, but its beyond doubt! Guess I have at least 100lbs if not more of dog food from 3 separate boars. I'll still shoot them but I will not be butchering any wild male hogs anymore. What a let down! Figured folks were just being finicky or something but they are definitely not! Freezer is full and I've made a ton of sausage hate to see it all go to the dog.

people who say they have a way to soak or get that stink out are fools....stick with the sows or the little ones

I was thinking from the title that you were looking for a recipe for a boar's taint. I'm saying to myself, I didn't know that you could eat that particular cut of meat.

I've had pretty good luck soaking moderately-sized boar meat (when freshly killed) in a large ice chest filled with ice-water. I drain the water and add more ice every day. After about a week I've found it makes great sausage. I've used for pan sausage, bratwurst, and as part of summer sausage. Since I'm not working in the pig eradication business, I like to make use of what I kill.

For a long time now I have felt this way. I go extra out of my way to keep our animals clean and cold as quick as possible. Have eaten boars up to 300 lbs that were fine and ones as small as 50 lbs that would stink up the house or have a bad taste no matter what you did. All the people I know that used to swear they were all good (me included) have changed their tune. If it smells when I shoot it I feed it to the buzzards. We have more than enough sows for our eating needs. I have never had a bad sow, but not saying they don't exist.

I have eaten boars that were 250lbs and thrown away pigs that were 60lbs, both processed the same way by me. I say it all depends on the swine and what they have been eating. I think you find more big boars that the meat will stink than the smaller ones, the bigger boars I have killed all have a couple things in common, the fat will be white and they really don't stink.

I've shot a lot of hogs and agree, the boars need to be left to feed coyotes and buzzards if they are over 100 lbs.. Sows seem to be good no matter what the size. I once butchered a domestic boar that had been altered about 30 days prior, as the guy I purchased it from said it would be absolutely fine....he lied! You could drop some in the frying pan and smell it all over the house. Domestic or feral, it doesn't matter...they can smell the same.

I really don't know what it is that makes them stink. I have shot and butchered feral hogs on gut piles (chicken guts) that were getting a pretty steady feeding of chicken guts every week or so that were fine no smell any different than pork at HEB.
