So I'm going to Mexico prob in the summer my girlfriends family own a big ranch out there and well wanted to see what if any are the hunting regulations out there..,

Yes there are seasons and regulations.
Go to Angadi.com and the seasons, bag limits etc are listed.

Be very sure you are familiar with the necessary paper work to transport guns and AMMO across the border. No mistakes on the serial numbers, all T's crossed and I's dotted. No ammo loose in the car under the carpet, seats, etc. They will go through your vehicle with a fine tooth comb. I would pay an outfitter to help me with the paper work.

I'm not taking anything over its all family owned land... They havnt had any cartel problems there so hope it stays like that
