Pintail and widgeon my son shot out west, aged a week, brined 3 days, seasoned another 3 days, cooking like a steak camp style.

This how you cook it boys, I just wish I had some bacon to throw on there and season it up a bit, but it was good pintail the best!

Now that is a duck cooked to perfection. Nothing worse than an overcooked and dried out duck. Its 9:30 PM and now I am hungry. Curse you Guy.

Nice...I ate some pintail and gadwall Sunday. No pictures. I smoked it...I overcooked half of it which pissed me off but the other was good. I walked away from the pit and it ended up getting hotter that I wanted it to.
Dear Lord please bullwhip me for saying this but I agree, Marcstar is in the lead. Please nobody use this as a quote!!!

You age the whole bird correct? What brine? What seasoning? Yeah, I age them whole altho I think you are fine to breast them first and age them. I just use seasalt to brine. And seasoning, I normally just use fresh cracked black pepper and garlic salt, but this time I used some kinda wild game spice someone gave for Chrstmas.
