Now that is a duck cooked to perfection. Nothing worse than an overcooked and dried out duck.

Nice...I ate some pintail and gadwall Sunday. No pictures. I smoked it...I overcooked half of it which pissed me off but the other was good. I walked away from the pit and it ended up getting hotter that I wanted it to.

Yeah, I age them whole altho I think you are fine to breast them first and age them. I just use seasalt to brine. And seasoning, I normally just use fresh cracked black pepper and garlic salt, but this time I used some kinda wild game spice someone gave for Chrstmas.
