I'm wanting to hunt a nilgai, but I'm not sure if the meat is any good. Does anybody know how they tast.

I've never eaten one, but I've heard they are very good.....so long as you shoot one that IS NOT STRESSED. For instance, on the King Ranch, they usually shoot the Nilgai out of trucks as they are running (their adrenaline will be pumping) and I've heard the meat is not as good when they have been running a lot. Like I said.....can't speak from my own experience, but that's what I've heard.

Nilgai is great - I haven't tried axis, but nilgai taste is more mild and closer to beef than elk.
I have eaten young and old, and bull and cow nilgai and thought all of it was great.
Like any animal, it is probably best if the animal doesn't have adrenaline pumping, but I have not noticed a difference from those shot on the run and those not shot on the run. They have great eye sight and hearing, and when they hear or see you, they run. That's part of what makes hunting them so much fun -- they're tough to find and tough to bring down.

Excellent table fare. Just keep in mind, if you overcook it will be like leather.

Thanks, I hunt on the king ranch and will keep that in mind. I've heard others talkin' about hunting the King Ranch before. Is there a way to get on it as a lease or what do you need to do? More info please. PM me please so we don't steal this thread. I've heard ALL of them are good eatin'. I think they are AWESOME animals in their own right. I have a buddy that killed a good bull awhile ago and was amazed on the size of it. I've never seen them in person....only pic's. How much meat do you get out of them?

the lease he hunts can only be leased by a business, which is how most of them are i believe. they are quite pricey, and have a bunch of rules which u must follow to the T. however, it is a cool place where they hunt. lots of quail, and a TON of hogs are there.

That's true it is only leased out to busineses, but they do sell package hunts.
