Did backstrap seasoned with rough ground black pepper tonight. Added some garlic salt, cooked to a medium, the skillet wasn’t as oiled and started smoking pretty bad so i didnt cook as long as i wanted nor did i get the char I like, but chef’s kiss….super tender, flavor is great with the pepper adding some good spice and the garlic salt adding enough to balance. Got the thumbs up from the wife too!

Guys, 28 day age is the bomb.
