I've only had elk, axis and bison and they are all really good. My personal favorite is axis.

Of these I have only taken Elk and Nilgai and the Nilgai was quite a bit better.

The oryx I shot was some of the best tasting I've had, REALLY curious how it compares with the Gemsbok I hope to harvest soon.. I have delt with/ate a lot of Hybrids/purebred and full bloods and there IS a difference.

Nilgai, in my opinion, is the best meat of any animal. If interested in a Nilgai Hunt in South Texas, I can recommend an incredible place.

I cut all my own meat. Pull the back straps and the tenderloins. Separate the bigger muscles of the hind legs into roasts and grind the rest. If I want steaks or stew I break down a roast as needed. Cutting meat is easy when you get a little experience. I haven't ever paid anyone to do it since my father and grandfather taught me how to do it. I've got my own grinder for burger and sausage and vacuum pack everything. I can do a whole deer in less than 2 hrs including the grinding and have it in the freezer.

Shot an oryx last year and the steaks, jerky and sausage were unbelievably great. Was just wondering about other options...

Haven’t had nilgai but familiar with its reputation. Have had the rest. Elk and bison too lean for me. Eland is great, oryx better, but prefer axis most.

Have had all but eland, but would add red stag to the list. Red deer is served regularly in Scotland with nearly every eatery having it on their menus, it's an amazing meal!
