I postponed my cook since its getting hot again..

Nilgai chili should be good if I can get one

I use separate spices cuz I got a ton from my last cookoff.

the Pendrey's original is fantastic. also, their cumin is so far above anything you can get at a store. They have a storefront in fort worth.


The best for spices and blends. I love going to Pendery's. The smell is incredible when you walk in. They probably have 20 different chile blends. Great place, been around forever. Used to be downtown and moved to the near southside a number of years ago. Well worth the trip or order online.

My kids love hard core carnivore. Just meat and seasoning and then we normally add cheese and avocado

TexJoy chili powder of course. Made in Beaumont, Texas. Plus, sautéed onion, bell pepper, and garlic, tomato paste, stewed tomatoes, Rotel tomatoes, other assorted spices.

I have used an assortment of meat for chili. My all time favorite is leftover smoked brisket. I don’t wrap so it has good bark on it. That brings chili up several levels.

My wife likes beans so I put beans in for her.

She also won’t eat chili unless she can eat it over rice. Don’t knock it till you tried it.

P. S, Instead of Texas chili I made a big gumbo during the cold spell last week.

Just my 2 cents.
