lately the thought of eating any wild game except fish has turned me off. Not sure why, just yuck. I will be giving my whitetail away this year. If I'm lucky enough to kill a Nilgai, I will definitely try it. I've never been good at cooking venison either. Chili and sausage are about it. The nilgai is supposed to be gourmet venison, we'll see.

Same for me , I get a little smoked sausage made from each kill and then give the rest away. I love crappie though, never give that away

If you knew what grocery store meat went through before you bought it you wouldn’t want to eat it. I agree , have to be careful, check sources, but it’s still possible. Beef and Bison taste better than venison, to me.

I'm way yonder old school when it comes to game processing...NOBODY handles my game meat but me. From the time it hits the ground to the time it hits the table, it's my hands and knives doing the work, so I KNOW how that animal was handled. Buzz, we're busily gnawing our way through the nilgai that I took back in April and we're enjoying it. Very similar to cow elk. Damn, now I gotta go thaw out some nilgai for dinner!

Seems bizarre to me but to each their own. I grew up on a chicken farm - i will not buy grocery store chicken. We buy from small local farmers selling free range chicken. Have Beef farmers in the family - will not buy grocery store beef or even their beef direct - 50,000 head in high density feedlots walking calf deep in their own sh!t. Typically kill enough deer and bear we don't need to buy beef but in the occasional lean year if we need to we buy direct from a small farm around the corner where he raises 25 or 30 head of Angus per year.
Fish i am with you. Won't eat grocery store fish either - it is largely farmed and/or imported from Asia - no thanks. Ice fish all winter to stock pile walleye and perch for the rest of the year.

Most of my wife and my protein intake is wild game. I usually home process just about everything. Hope the day doesn’t come where I get that food aversion

Yep I harvest 3 deer a year for my family. Don't buy hamburger meat at grocery store saves money and healthier

I eat a lot of wild game at home.
Whitetail deer im not the biggest fan of, I like it in dry sausage and jerky. I just don’t like the taste all that much.
I do eat a lot of tilapia bought from the store, as I don’t get down to the coast enough to catch trout and reds.
I have mainly been eating bear, moose and buffalo from my last trip. If things get lean I’ll try and get a few axis or a cow elk.
For it is not the quarry that we truly seek, but the adventure.

I thought it was good, nothing exceptional. Moose is very good. I was not all that impressed with the Buffalo. Better than a whitetail but that’s not saying much. Best game I’ve eaten was kudu neck, sliced vertically with the vertebrae still in. Absolutely amazing.

Beef is good. If venison was better than beef we would hunt cows and farm deer. Very few people can honestly say they prefer venison to beef. I did enjoy eating bear. That was one of my favorite meats

I never had a piece of meat I didn’t like. But I kill a steer every year. I like venison to change it up. Nothing is as good as beef. Fried and blackened fish also hit the heat several times a month. The only game that may be better than beef is fried quail. T-Bone has an appointment with a butcher knife Tuesday morning. He’s been enjoying 25lbs of corn a day for the last few months.

Timely post. I made a Mississippi pot roast with the last of my deer today. Guess I should have put one more in the freezer last season. And as far as Nilgai, it is close to the top of wild game in table fare. My top three are pronghorn, axis, and Nilgai (no particular order).

We process all of it from steaks, roasts, hamburger meat, snack sticks, breakfast sausage, chicken fried steak etc. Shot a doe late in the season when cold skined her out placed a game bag on her and let it hang in the shop at 38-40 degrees for 7 days. Was/is pretty tasty.

Vast majority of the meat we eat is wild or raised at home. Butchered 75 chickens this year since my son started 4H always process our game at home. I can’t say I prefer venison to beef for flavor texture tender, but it’s better for me I love hunting by no means do I mind eating deer and ground and in sausage I don’t see much difference. Killing deer making sausage etc. is just how we do it.

We eat a lot of venison at our house. Especially ground meat. We add a little beef tallow to our ground venison. My family, including the grands love venison.
