Tried making my Chicken Fajita Nachos a little different yesterday for Sinko De Mayo. Turned out pretty good for a Gringo. Much easier than making single nachos to.

A little multi-cultural tip I learned for nachos. I was in the RGV/Brownsville area eating at an Italian restaurant when the waiter recommended nachos for an appetizer. They had to be piled at least a foot high when they arrived. EVERY SINGLE chip was crunchy all the way to the bottom. We asked the waiter how the accomplished that. He said they used wonton wrappers for chips. They take the wrappers cut them in half and deep fry them. ''ve done it several times it works like a charm. They can get soggy like chips, but it seems to take them way longer to do so.
