I started using the enchilada sauce recipe in the video below 2-3 years ago. It`s really simple, good and easy to make. They really hit the spot last night and I have leftovers for today. up

No store bought grated cheese was used in this recipe. barf

Those look incredible! I have used this recipe for enchilada sauce with great satisfaction, but I will have to try Rachel's for the complexity of spices. It is possible that absolute perfection would incorporate elements of both.

That looks delicious. Do you make enough at a time to save, or have to make fresh each time? I'd love to try it and freeze some smaller batches

my own recipe is very close to that video except I add in some tomato sauce and typically use beef broth.

Always a batch at a time. I`m sure you could freeze it and taste perfectly fine. I`ll bet you could make it 4-5 days (at least) in advance and leave in the fridge also.

A pinch or 2 of cinnamon is a great addition to enchilada sauce!
