Butterflied Shrimp are one of my favorite things to eat. I started using Panko breadcrumbs a while back and really like them over what I had been using (Louisiana shrimp batter). I make the shrimp hours ahead and freeze them. The breading/batter stays on them really good using that method. About 2 minutes in the hot oil and they are done.

I prefer red sauce / horseradish sauce with boiled shrimp, but good on fried as well. I really like a Tartar sauce with capers recipe I`ve been making for a while now. It`s awesome with any fried fish or shrimp.

1 cup mayonnaise, try homemade mayonnaise

2 small dill pickle, chopped very small (3 tablespoons)

2 tablespoon fresh lemon juice, plus more to taste

2 tablespoon capers, chopped, optional, but recommended

2 tablespoon chopped fresh dill or 1 teaspoon dried dill

1-2 teaspoons Worcestershire sauce

1 teaspoon Dijon mustard, optional, but recommended

Salt and fresh ground black pepper

Love shrimp they look great! I sometimes do similar to what you describe, freezing deer steak or chicken strips before frying. Seems to work well.

These shrimp were fried using the Louisiana Shrimp batter. I used it for years and really liked it, but I wanted to try something different. The Panko breadcrumbs are much better in my opinion. I`ve even fried a few in cornmeal when I was frying fish before and they were just OK, but very easy to prepare. Your milage may vary.
