Wife bought a package of rack of lamb (a pair come in the package)
Did some trimming of unnecessary fat in between the bones
I went with a pretty simple marinade:
1 cup parsley
2 teaspoons rosemary
Pinch of red pepper flakes
Squish of lemon (no seeds)
1/2 cup of extra virgin olive oil
10 cloves of garlic
Give it a spin in a blender or food processor
Apply generously to top and back and place in the fridge for 3-6 hrs (I put them in a ziplock bag)
Wipe off all marinade with a paper towel
Hit it with Kosher Salt and ground peppercorn
Sous Vide for 1 to 4 hrs (I did 90 mins) at your desired doneness (135 degrees for me)
Pull them from the bag and slice into single or double ribs chops
Pat them dry and let rest for 10 mins
Prepare a searing fire on the grill
Once the coals are good and hot - place the chops on the grill and sear for 1-2 mins , don’t let them go up in flames too much but do let the fire do its work (sizzling surface on meat)
Pull em and plate with your favorite side
Wash them down with some wine
From start to finish a 5 hour prep and cook time (I marinaded for 3 hrs)
Delicious !
Fed 3 people
