OP Thisisbeer Tracker T Joined: Jul 2018 Posts: 872 The Woodlands, TX	My son found what’s called an accordion steak on YouTube and wanted me to try it out on some backstrap tonight. Turned out pretty good. Increased surface area from the cuts allowed I little more cooking on the outside. I definitely will do it again. Marinated in some mushroom soy sauce, Worcestershire, lime, and olive oil for about an hour. Seasoned with my homemade coffee rub. Grilled and served up with a baked potato. Everyone cleaned their plate.
