Big day coming- sausage making day.

Ordered the pork and the beef casings. Will be picking it up and cutting that up Friday.

Pulled out al the frozen venison last night. It's prety much already clean and cubed. Distributed the cryo-vacced bags into 3 different ice chests to thaw. Yes, you have to do this well beforehand.

I remember those days when my dad and I got busy doing that ... What type(s) of sausage are you planning on making?

Hamburger first, then season meat to make breakfast, fresh and dried sausage.

my dad used to play around with recipes and fine tune ... he had the best summer sausage I've ever eaten. When he passed, somehow his sausage recipe cookbook got lost or sold in the estate sale. I would give a good amount of money to have it back with all his notes and adjustments he had made.

Dang it to heck and dreaded - meat back in freezer. Wires got crossed up. Not making until the following weekend. Be careful if in Concan that weekend - Wifeypoo going to Frio River Music Fest without supervision.

BigPig and BigFitz hate it when they get their sausage party dates mixed up too.

All I hear all day are about sausages and shifting gears by the passenger, I think everyone’s mind is twisted these days and not normal like mine

Well that stinks.

I started making my own smoked sausage years ago and swore I'd never use a processor again, but this year between my work schedule and other things I've been struggling to get another batch in the smokehouse and finally said screw it and dropped meat off at the processor. Oh well, I've had their sausage before and it was good so.......this Saturday I'll be defending our title at the Rockport Crawfish Cook Off, gonna be a busy weekend.

i am just trying to get it done. Work on my sausage one day and it benefits me all year. Can't wait. Plenty of joy to spread around.

Obtained a 100 pounds of picnic pork and multiple sets of beef casings. Started carving it up at 2:30. Drained the blood off the venison and cleaned it all up. Cleaned up and covered it all with ice. Finished up with no real break at 8:30.

Pick up Montag and the easy Eddie at 7:30 in the morning to head out Purgatory. Should be done soon after lunch.

Got the call sooner than I expected. Headed out Purgatory Road way, filled up a big ice chest, headed home, got out the vac sealer and got after it -
