My cousin caught quite a few buffalo and ask if I would can it, so I did.
I thought it was filets but wasn’t, so I cut it up the best way I could and stuffed the jars with rib bones and all.
I never done it that way before, I figured just take the big bones out before making patties?
I have canned fillets before and they were really good.

The wifes grandad always fished lake wright patman and gill netted buffalo , one ugly damn fish but the meat is better than red snapper. We always used a hatchet to cut them up and deep fried the chunks bones came our easy. I sure miss that ol fart
