Good gracious, man! You two eat like royalty and I am most envious. I like to pan-sear a filet dusted with granulated garlic, salt and pepper in butter and oven finish at 400. Sound about right?

When I cook filet's indoor, it's a one minute per side sear on very hot cast iron, then finish in a 500° oven with one turn.
What's your method shown here. Looks good.
An unethical shot is one you take, that you know you shouldn't.

Pretty much the same. One to two minute sear on each side in the pan, then add a little butter. Baste really good and finish in the 400-450 degree oven for another 3-5 minutes. Whatever the thermometer says. Rest 5 minutes, basting again
