That is exactly what my son made next. I been out of town all week skiing, I walk in yesterday that is the first thing I see is him making a big pile of chips, he just finished. I said is started to make enough for just his nacho's, but got an a roll and decided to cook the whole baf of tortillas. They are really good, filled up 2 big ziplock bags. My son also likes to make all kinds of green/red dipping sauces. He is really an incredible cook, he knows waaaaaay more than me. He is a real student of Mexican cooking, there is probably not a youtube he has not seen, is says the best youtubes you have to google in Spanish. On his day off, he will spend all day in the kitchen cooking, it is fun for him.

I'm seriously thinking about retiring and opening a restaurant with him as my cook for the fun of it, would love to do it in the mountains. I told him step one I want to see his menu.

Go ahead and apply for a liquor license now.

He has turned into a bartender student as well, he has turned into a tequila connoisseur. I myself bartended 40 years ago at several different bars including Mexican restaurants, though he has never had a real job as a bartender, he knows waaaaaaay more than me here as well, and probably more than most bartenders.
