The wife and I just made 11 lbs of pepperoni snack stick to pass out to the neighbors for Christmas. They have to set in the fridge over night then on the smoker tomorrow for a 2 hour smoke to finish the process. This time I used beef hamburger because those of you who have ever had a steer processed know you wind up with lots of hamburger. I used the High Mountain mix for the seasoning. Gosh those look delicious! What temp did you smoke them at to ensure they are fully cooked? I wonder if I could do something like these on my Traeger.

They do look delicious! I was thinking the same as Nolanco about the temperature.
