Looks like a great meal to me. The only venison tartar I have made was from elk tenderloin, that was good.

Looks like a great meal to me. The only venison tartar I have made was from elk tenderloin, that was good. I used back strap for this round. It was excellent.

Will head home for the holidays and see what I left in the freezer. Hopefully a steak or two!!
