Stay away from something "weird" unless you plan on buying a lifetime supply of ammo from the start...which is a lot easier with a hunting rifle than a recreational or self-defense firearm.
.30-30 WIN, .308 WIN, .30-06 Springfield would be my choice in your situation...in that order.

You're on a good plan with a .308 bolt action. No need to build one, just buy a Tikka CTR with a 20" barrel. That's a great hunting rifle.
This. I absolutely love my CTR in 308. It's already threaded for a suppressor, and the relatively short barrel length is handy. The stock isn't super awesome, but can be upgraded at a later date. For factory ammo, be sure to try out the Federal blue box 150s. For handloads, the 168 Gold Dot is a shooter with great terminal performance.

5.56mm is a good varmint round but it is not a good deer round. Will it kill a deer? Yep. Is it the best round for the job? Nope. Pick any of the common and popular 6mm, 6.5mm, 7mm or 30 caliber rounds and you cannot really go wrong. My personal suggestion would be 308 Win. You can get ammo anywhere and it works well with very little recoil. Anybody can shoot the 308 well.

5.56 is not a good choice for deer, neither is a 22-250. I know there are people on here who use them and kill deer, but they are going to lose deer too--FACT (especially if you shoot a fair number of deer) I have lost too many deer with a .243 for my personal acceptance (over the past 25 years) and it is not a bad deer round as I have killed a lot with it too, but there are better options than this too
Probably the best overall choice for deer in Texas is a .270, but a .308, 7mm-08 and 25-06 are also good rounds to consider
Shot placement is also very important----go to the range and bullet should hit 1"-1.5" high at 100 yards. Practice too!!! If you are comfortable with your weapon, you will hammer them when it is GO time

I've hunted since I was 7 going along with my Dad. Have all kinds of high caliber/high dollar guns, but the last couple of years I've gone back to the Lever Actions in 30-30 and 44 Mag. Both weight around 6lbs and are easy to carry all day in the field and they drop deer like they were hit with a sledge hammer.

It’s easy to point the finger at the beloved 223. Wife shot one this weekend with a 270 win and 140 nosler ballistic tip. No blood at all we found but we were fortunate to find the deer.

I believe in 30-06. It takes everything from pigs to moose and I don’t think you can kill them too dead. For a smaller person, women and kids, it might be too much weight and/or recoil. For white tail deer and or elk I see no need for a magnum. I’ve never hunted moose but figure a 30 caliber pill ought to be sufficient.
I was on the USAF pistol and rifle team during the 60’s. For competitive shooting, we used 30-06. The little pew pews weren’t accurate enough.
Without a sense of urgency, nothing ever happens.

Every American needs at least one .308 Winchester rifle.
Good choice on the Tikka.
Federal loads some 165 gr Sierra Game King spire point boat tail. That classic bullet is a stone cold killer.

That rifle, caliber, and bullet has been my set up for a very long time. I opted for 165 gr the day I went and bought ammo to test when I first got it. Quick backstory for the prompt:
Had a nice doe walk past my lane this morning and took a really clean shot at her broadside, maybe 1 o clock. Tucked high shoulder. She stumbled and took off. Couldn’t see where she went and very little blood at the impact. We tried to find and track her for hours and gave up.
I used a 5.56 62gr Barnes Vortx round. Rifle is zeroed and shot was clean so I know it was good.
Looking to get a .308 or 6.5 bolt gun, or maybe a nice 12ga. My property woods are pretty thick so I can’t see needing the rifle range anyways.
Only hunting deer right now, unsure if I’d hunt other game later. Don’t want to make that mistake again I wanted this setup to work as the AR is a very nice one and 1-8x glass and should have just shot her in the head knowing what I know now. See so many guys posting kills with 5.56 so I’m dumb founded.
Appreciate input! Thanks If you want the AR you already have get a 300 HAMR or 350 Legend barrel and put it on that setup or a Bolt, barrel and mags for my favorite AR round 6.5 Grendel. Any of those would be better than the 223. Or just get new upper in any of those and still have the 223 for other chores.

That’s exactly what I did. After having a low percentage success rate shooting hogs with the AR in 223, I got a 6.5 Grendel upper. The dead hog success rate is near 100% now. Then I got a lower for the Grendel. The 223 is just for visitors to shoot targets and me to reduce the number of squirrels eating deer corn. I really like the 223 AR, but it just doesn’t do anything really well.

Larue sells his complete 6.5gr upper so I'd probably go with that and move my glass over to that upper if I went that route. I still want a .308 bolt gun, maybe I will do both.

I got a Grendel AR from someone on here years ago and liked what it did on game but prefer to hunt with a boltaction so I had one built before any factory boltactions were available in the Grendel. That is what I hunt with mostly these days. Latest Grendel harvest for me https://texashuntingforum.com/forum/ubbthreads.php/topics/8962949120lb live weight Mississippi doe, double lung she went about 30 yards. From about 20 yards to over 400 yards the Grendel has worked well on hogs, deer and yotes for me. On still wanting the 308, the 2 cartridges are very similar in trajectory with some loads they almost identical out to at least 600 yards.

As for your choice of Tikka, I have been slow to jump on the Tikka bandwagon...well, technically, I have not jumped yet... but I have handled them at the store, and they sure are smooth. I've really been eyeballing a Tikka CTR in either .308 or 7mm-08. Unless I start to fancy something else between now and when I can afford a new gun, that will probably be my purchase.

You. 4K? No way. You don't need a supressor on a .308, and a great scope is like $1,000-$1,500.00 (Leupold VX5 HD). Hey, it's my dream, ok? I don't NEED a suppressor, but I WANT a suppressor (already have one that does double duty on my 357 and 300blk). I know I can get a great scope for $1000, but I WANT a Nightforce NX8 FFP mil-c reticle. Considering my 22" barreled 788 in .308 does pretty damn well (I think I outshot you at Sr's Hunter's Challenge with it, didn't I), then I'll wait until I can afford the full $4K version. Hell, I couldn't even afford the $2K version right now.
