Pulled out an elk eye of round and a hunk of pork loin for a shorter smoke while watching some football at home. White oak and pecan for the smoking wood. Probably take a few samples down to the bar for our non hunting friends, good for a free beer or 2. Anyone else smoking today?

Man what I'd give for a chunk of elk meat. I recently sold my house and gave my smoker away to my cousin

It's off the husband's spike, will cut with a fork.
Thankfully our elk are much better eating this year.

I've only had elk once in my life and it was unbelievable! Had an older supervisor friend of mine from somewhere in Wyoming that had never killed or eaten feral pork before, but he always wanted to. We were on a platform project down here together so I took him out one night and got him his first pig (big boar). I also gave him a bunch of several types of fresh wild pork sausages I had recently made for him to take back home, and in return he brought me a big bag of various cuts from a young cow elk he had killed in a friend's wheat field in Wyoming. That was years ago and I still can't get over how good that meat was. Ever since then I've always said I wanna go hunt a cow elk or two, but haven't made it happen yet.

Wrapped and going to cheat by letting the oven finish it off while we go down for a few cold ones. Took it off after 3 hrs of smoke. I made a tangy BBQ glaze out of some sauce we had for 1/2 the elk and the pork was mopped while smoking with a tangy mop sauce. I might remember to take a pic when we get home of the finished product, lol. Bar friends will have to wait until tomorrow afternoon.

Elk turned out really nice. Lots of juice as you can see and very tender. Pork is great as well, not hard to get that right though.

That looks great, we have been enjoying some smoked whitetail deer but know it is no where close to elk in flavor. I miss having elk meat in the freezer. .
lf the saying "Liar, Liar your pants on fire" were true Mainstream news might be fun to watch
