I have several deer roasts in the freezer from last year that I need to turn into jerky.

I've found several recipes that use Dr. Pepper as a base. Has anyone used a marinade with Dr. Pepper?

This one caught my attention.

After trying all kinds of homemade recipes, my favorite is AC Legg's Old Plantation Peppered Jerky Seasoning. I make some with their plain recipe for the kids and they love it, but I prefer the peppered and I like to add more course ground pepper to it also but I love black pepper. I love the flavor of Sriracha Sauce too and I like spicy, so I'll also make a batch of peppered and add a decent amount of Sriracha to the marinade. That is my personal favorite but too spicy for a lot of folks, especially if I add some red pepper flakes or Chili Tepin flakes to it. grin The regular peppered is the most popular with the folks I've shared jerky with.

skinnerback, you sound like my dad on liking things "spicy" ... he would burn most people's taste buds out with some of his recipes. Those Chili Tepin peppers grown wild around central Texas, I grew up calling them turkey peppers and HOLY COW are those babies HOT. I don't recall Sriracha being around the small town I grew up in, so I doubt my dad ever tried it, but I like it pretty well.

back on point of the question regarding using Dr Pepper for jerky, I've had some made with root beer that was pretty good, had a little hint in the jerky, not overpowering though.

Yes Sir, they are my all time favorite pepper. My Dad got me hooked on them when I was a little guy hunting in S Texas. No flavor like them. To this day one of my favorite things to do is go picking peppers with my kids. What I don’t eat fresh or use in canned salsas I dry and vacuum seal for consumption or planting. Good stuff. cheers

from the ones I've had, they are hotter than my liking ... my dad used to make pickled peppers, using banana peppers and jalapeno, a vinegar based juice that was great in a big bowl of beans (or anything really). He tried a batch like normal but added green & red chili tepin for added color to fill in the voids between the other peppers, beautiful display but way past my hot tolerance level, actually my FIL thought he was a real spicy eater but he couldn't even go that batch. My view is those are paralyzing hot!

Yes I have tried sodas before for jerky marinade. Dr Pepper turned out well, but the one that surprised me the most was root beer jerky. It was incredible.
