Despite being a native Texan, my career kept me in southeast Louisiana for eighteen years...and Lord, did we ever have some fine meals during that time. As a consequence, the She-Wolf and I crank out something reminiscent of those dinners every so often.

Tonight we cleaned up some fresh shrimp (15 to the pound), dredged them in egg, spicy cajun fish fry mix, back into the egg, then into panko crumbs. Sixteen to eighteen minutes in our convection oven at 385 brought them out toasted brown and crunchy. We whipped up some siracha remoulade for dipping and had a caesar salad on the side. Dat stuff can get HOT, I tell you for true!
