Safeway had ribs on sale so I bought a couple of racks for smoking this morning. Pecan and red oak wood, my mop sauce and Fischer's BBQ rub. Should be ready before the homecoming game for UW at 2. I think about 90% of the people like tender/fall off ribs, especially kids, women, and sporadic BBQ eaters. The Tug/Clean Bite/Pull people would be in the minority. Like brisket, if you have to use a knife, you’re in trouble. That looks great.
