Still learning portion sizes, since the MIL passed. Used to make food for three, and a little leftover for a lunch. Just cooking for two now (when one is finicky, ssssh!) is a little more planning!

Johnsonville hot Italian sausage, out of the casings and browned, and a little diced pepperoni, instead of ground beef. Added some sliced mushrooms and made it a lot more flavorful. Lots of mozzarella. Parmesan crisps toasted in the oven.

I hate making meals for two unless it's something like chicken or steak.
Sides get made for the masses around here, and much of it is wasted I am ashamed to say.

HH. Not really. By browning and draining the sausage first, I think it absorbed the oil from the pepperoni.

That looks outstanding! The only lasagna I tend to make is with zucchini instead of pasta. This actually works better than expected and is a great way to use up some of those gunboats hiding in the garden. That recipe with the sausage might just be "bomb."

Looks good man. Been a few years since I've made 1. I do about 90% of the cooking at home. Being a pretty decent cook is kind of a curse.
