Wife talked me into going grocery shopping with her yesterday, saw this pack of meat and threw them in the cart. Wife ask what are you going to do with those? Me whatever.
This morning was whatever number 1. with eggs, cheese grits and of course Tabasco!

looks great! ive been cookin eggs for 40 years and still cant cook them like that? maybe not enough grease/oil?

Medium-low heat, baste them with the bacon grease. Don't turn over!!

Poppa two ways that I get the eggs like that almost every time.

1.If you cook enough bacon use the spatula and splash the hot grease on top of the eggs to finish cooking the top of the eggs.

2. and my most desirable way to cook them with very little grease is to simply put a lid over whatever pan you are cooking them in, this will act like a little oven and cook the top also.

Perfectly cooked eggs! I usually put a lid over the pan and pour a splash of water into the hot pan to the them steam a bit. I think the French do it that way, for whatever that's worth.

Glad someone else uses a lid. I like sunny side up eggs and everyone says you have to spoon fat over the top of the eggs to cook them. I just put a lid on the pan- comes out great.
