Been processing my own meat for a couple of years and the necks seemed to go to waste, just could not get the meat off of them the way I wanted to. Had an idea that I would cook them down bone in and make tamales with them and wow what a treat! It takes time but well worth it not to mention a Christmas tradition for a big group of our Hispanic brothers and sisters. Anyway, they turned out great and I will be keeping the necks whole and doing this from now on!

Always use them as my braising cut. Much meatier than shoulders and better textured then hams when you want a good pot roast

I wish I could make tamales, deer neck would be the perfect choice! clap

I process my own deer & I've started putting the neck on the pit when I get started. I smoke it low & slow until it gets loose from the bone. Then strip all the meat off removing the yellow leaders & other junk & save the meat for tacos. I saute some peppers & onions along with some of the meat & serve on flour tortillas. Good Stuff! food
