Always use them as my braising cut. Much meatier than shoulders and better textured then hams when you want a good pot roast

What did you season with? What liquid did you use? Some chilis from the garden, some pablanos and guajillos, some beef stock, salt, pepper, garlic, etc…

I wish I could make tamales, deer neck would be the perfect choice! I process my own deer & I've started putting the neck on the pit when I get started. I smoke it low & slow until it gets loose from the bone. Then strip all the meat off removing the yellow leaders & other junk & save the meat for tacos. I saute some peppers & onions along with some of the meat & serve on flour tortillas. Good Stuff!
