Do BBQ restaurants use Pellet smokers? Why not? Do people at BBQ restaurants manage their business outside of the restaurant for 12 hours each day? No because it is their business and they can baby the cook throughout the entire day. If I could have a "real" smoker and baby cooks throughout the entire process, then sure I would have one. Being that is not an option, the pellet grill on wifi is about as good as it will get for me. Not gonna lie though, when I throw down rows and rows of jerky sticks and set it and forget it until it hits 160 internal, while I am in the shop making bass baits or doing something else is pretty nice though.

Do BBQ restaurants use Pellet smokers? Why not? Because if the auger craps out their biz is toast until repaired. No moving parts in a stick burner I'm not buying that. They should have multiple smokers if one craps out. This is 407's new smokers he post on TFF this month, they ain't pellet..

Being that is not an option, the pellet grill on wifi is about as good as it will get for me. Why not just buy real BBQ from a restaurant? That is the easy button.

Have enjoyed this smoker for awhile - holds a temp of 250 easy and good for 6 - 8 hits with little to no maintenance. Weber Smokey Mountain, my first smoker, loved that smoker use it for years. The water pan makes a mess, I stopped messing with that early on...

Have enjoyed this smoker for awhile - holds a temp of 250 easy and good for 6 - 8 hits with little to no maintenance. Weber Smokey Mountain, my first smoker, loved that smoker use it for years. The water pan makes a mess, I stopped messing with that early on... I had one too a long time ago. Cooked a lot of good meals on that thing. A quality/tuned stick burner is actually low maintenance. Throw a split or two, or a shovel of coals or two in the firebox every couple hrs and go about your day. I enjoy the process, even on 12-16 hr cooks but that's me lol. Now there are a lot of stick burners out there that you really have to baby (I have one now), but they're not all that way. Looking forward to having another custom pit built to my liking....

Thousands of BBQ joints operate with 1 smoke pit and do just fine I’ll keep my eye out at rodeo cookoff to see who’s got a setup like that in their booth 😉

I’ll keep my eye out at rodeo cookoff to see who’s got a setup like that in their booth 😉
That was in the startup days of 407, way past that now.

Man that is one sweet set up!! Thank ya sir! Thanks man! If I were out in the country and not sharing rain gutters with my neighbors, I’d have some added to it as well, but we bought this house right at 3 years ago figuring we’d sell within 5…next house with acreage will definitely have a whole game storing/cleaning/processing area. Wife loves water fowl and I like land walkers

Wife loves water fowl and I like land walkers Ya I have told my woman many times that once the kids are grown and gone, the basketball court concrete pad we had poured for them will be converted a fully functional outdoor kitchen with multiple cooking sources, refrigerators and freezers, hanger, cleaning station and concrete pizza oven. It might be another 5-6 years but I had that 20x25 slab poured with that in mind one day. For right now, kids just do kid stuff on it.

Essentially that’s a giant pellet smokers with logs. On commercial specs, pellets would be way to expensive compared to logs.

This is from a pellet smoker. I’m far too busy to waste time babysitting a stick burner. It’s a damn shame you can’t get a good bark or smoke ring from a pellet smoker…

Love my pellet smoker. A wood smoker is fun if you have time to sit around all day and mess with it, drink some cold ones with friends etc.
But day to day at the house for smoking and grilling I love my PitBoss.
