Bison for me, cow is all I've had but it is awesome. Moose would be a close second.

Pretty much the order listed here:
Africa - Eland, kudu, gemsbok, sprinbok or impala, buffalo ox tail, zebra, giraffe or elephant as biltong only US - Scimitar Oryx, space reserved for axis (yet to try), Elk, whitetail, cow bison, moose, mule deer, antelope (if it is good one) Birds - Quail, blue grouse, ruffed grouse, pheasant, turkey, dove, ducks/geese

The best of the rest:
1) Axis, 2) Blackbuck; 3) Bison; 4) Elk; and 5) Venison.

Quail. It goes way down hill from there. My all time favorite meal was my grandmother's fried quail with cream potatoes and gravy.

My choices are elk, axis, pronghorn, and simitar oryx. Not sure which one I prefer over the other. Just my opinion, but Pronghorn is the worst wild game meat I've ever had. Couldn't eat the one I shot, nobody liked it. I couldn't even give it away the ranch hands. Nilgai, elk, quail, turkey, teal, dove, and venison are my favorites.

I'll double on the Bison. However today's bison lives on ranch lands with good grass. That may improve the taste. I don't know how yesteryear's bison that ate buffalo grass, etc. tasted. Better than beef and that's saying a lot. After bison, probably a 3 way tie between young squirrel, doves, early in the year- ruffed grouse. I love dove shooting a lot because there is plenty of action comradery, the birds are easy to clean, and they taste great.

Pronghorn can be bad if not taken care of correctly or the animal was stressed when shot. Aging helps. Not saying you didn't take care of it. I watched a guide skin a pronghorn in Texas one time, he got pee all over the quarter and they brought it in to gut it from the field. That pronghorn no doubt was terrible for those older guys to eat.

I’d say nilgai, axis and scimitar oryx are all top tier. Never tried elk but hoping to shoot a red deer for meat this year.

I like it. Most of the people I run into in Wyoming act like they would rather eat out of the dumpster at Taco Bell than eat pronghorn…

A friend of mine who I trust w this kinda stuff did tell me Nilgai was his favorite

I will admit that while I like good pronghorn, but there are also bad ones you can't do anything with. After about three dozen in ID, WY, and UT about 50-60 % are good and no matter what you do the others are rank and strong. Now we cut a steak off the rump and fry in butter; if good, it will all be good. When they are strong they get given away to friends who like them, or go straight to the processor for heavily seasoned pepperoni sticks!!!

Oh my.........that sounds awesome. JG be right, RedSnake be on it. Been fortunate to bring home lots of Nilgai cows. Have not had effective sample sizes for elk and axis with only anecdotal experience with anything African. Don't really need to. How good do you need it to be? Nilgai flesh is so good that if there is anything better, that would only be a bonus. I cook a lot of meat similar to the manner described by Red above. Others are often caught off guard until they pass it over their taste buds.
