Lets see if we can get a best wild game table fare thread going.
I have always heard, Axis
Which is why I was able to finally schedule an Axis hunt later this year
Ive never had it personally

Domestically,
I’m a fan of elk, axis and nilgai. I would say Sika would rival axis and may be slightly better.
I’ve also been very impressed with the black bear I took in June. Meat has been very well flavored
For it is not the quarry that we truly seek, but the adventure.

My choices are elk, axis, pronghorn, and simitar oryx. Not sure which one I prefer over the other.

Eland is probably the best game meat I have had. Blackbuck is awfully good too.

Haven’t eaten a lot of any of them but out of whitetail axis mule deer prong horn elk and sika I would put elk at the top and the others in a 5 way tie.

We’ve killed two aoudad this year and to my surprise the backstrap and hind quarter steaks have been delicious seasoned like fajitas or any other steak.
I’ve eaten elk, axis, black buck, aoudad, oryx, and whitetail and to be honest, I don’t think there is much difference in any of it. If you can cook or learn how to cook it, it all turns out great

Elk and moose are my favorites. Bison and Axis is hard to beat too.

Elk, Axis, pronghorn if they have been eating good grazing are 3 of my favorites. Moose, caribou and whitetail are good as well.
Lets not forget he small game though, rabbit and quail are great on the table.

Does bison count? Would top my list very closely followed by Kudu, Elk, and Eland.
If we are counting fowl, Sandhills, pheasant, quail and grouse.

Out of the 4 legged variety I like Elk the most. But I would rather eat dove poppers over anything else.

Personally, I think Eland is the best game meat on the planet. After that, for stuff commonly found in Texas I would say Axis, Oryx, Elk/Red Deer, and Bison. On my trip to Africa earlier this year, everything was very good, but Springbok schnitzel and Zebra tenderloin stood out above everything else (except for the Eland of course, but that's really not a fair comparison).

Sika is more tender, but I prefer axis for flavor. Both are very close in my opinion. I did try gemsbok recently in burger form and thought it was great.

Elk hands down! Even Colorado tree huggers that I’ve met love elk meat. Pheasant is also great!

The mule deer I killed 2 yrs ago was the best deer meat I’ve eaten. He ate a lot of alfalfa and that may be why he taste so good.

Quite a few listed here that I haven't had. Of the ones I have had I'm going, in order, moose, elk, axis, mule deer, whitetail. Honorable mention to black bear and mountain lion. I don't recommend bobcat.
Silver spurs and gold tequila keep me hanging on. Pretty girls and old cantinas give me shelter from the storm.
