From our house to all of yours, have a blessed Sunday and Happy Easter. If we were closer, you'd all be invited to break bread together. Cheesecake is cooling before receiving a sour cream topping, fresh raspberry compote is cooked down and strained, and the rib roast that has been seasoned 24 hours is in the oven now. Blank that looks way good,  Hope mine comes out the same or close. Got a 5.15lb boneless Prime Ribeye roast for Easter Sunday and forgot to pull it out of the fridge in time. Was going to cook it yesterday but the wife had to visit a sick dear friend of the family so on it goes tonight.

Nice marbling, looks like a tasty choice for dinner! Well I will be better prepared next time. It was only a 5.15lb roast and I let it sit out for 4:30 hours thinking that was long enough, nope  Ended up cooking it at 350 for an hour and a half and let it set for 20 minutes, next time it will be completely room temperature and low and slow like you did. Turned out good for both me and the wife, she likes her meat med- to well done, I like it medium rare or less cooked.
