I simply add chopped onions, salsa,and cilantro to black-eyed peas and eat it with chips like a dip. You?

I add dried onions, garlic, rotel tomatoes, some green chiles and today some smoked german sausage chunks. Dash of either cajun or carne asada seasoning. We eat it as a side dish. Good friends downtown at our fav watering hole were asking about black eyed peas last night, I'll take them some to try today. Ours is simple mix of can of blackeyed peas, corn, and chopped jalapenos, Add a southwest style vinaigrette and let it sit overnight
