Step 1. Don’t shoot a Whooping Crane by mistake! Step 2. Lightly season deboned breast with salt and pepper, sear over a hot fire, serve rare after letting them rest for a few minutes after the sear.
I’ve personally not had one yet but this is how my uncle does it and raves about it.

Very lean so has to be no more than medium rare or it gets tough. But it makes great chili if diced and slow cooked or in a crock pot.

Just like a good steak. Rub with extra virgin olive oil. Season with salt,pepper,and garlic. Grill fast and hot to rare or medium rare at the very most.
