We're having a Blue Slate heritage turkey for Thanksgiving this year. Picked it up yesterday and processed last night.
Not sure if we'll brine it or not. Looking forward to the taste.
Got a nice rooster thrown in for free, he's a this spring's bird and the owner said he needs to be gone so we took him.
These guys raise a variety of birds, hogs and goats .

Hold tight on the wings when looping off the heads.

Our bird is the one in the middle . He dressed out at 10 lbs 14 oz, perfect for the 2 of us. Feathers will be trapping lure and bait.

Nice, I am brining one and smoking it, my dad is making baby backs. I am just making a turkey for my mom and the others who like to taste turkey once a year.

Herbie, I've been researching brines for this bird. Do you use a salt/sugar blend in your brine and do you soak you bird in clean water after the brine? Not wanting a salty bird for the oven.
