We're having a Blue Slate heritage turkey for Thanksgiving this year. Picked it up yesterday and processed last night. Not sure if we'll brine it or not. Looking forward to the taste. Got a nice rooster thrown in for free, he's a this spring's bird and the owner said he needs to be gone so we took him. These guys raise a variety of birds, hogs and goats .

Our bird is the one in the middle . He dressed out at 10 lbs 14 oz, perfect for the 2 of us. Feathers will be trapping lure and bait.
