With thick cut pork chops, I like to cook them to 145°, once you get to 150° you begin to enter into the firm and slightly dry zone on the temp scale.

My favorite way to cook porkchops is to lightly flour them and fry them.

MAMMA MIA!!!!!!

Lay that smothered cabbage over the top of the chops and let it sit for a few minutes to let the two meld together....oh man!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Dat's right. up food HEB finally had boneless smoked ham hocks back in stock today, they were unavailable for a very long time (Rona apparently). I prefer to use tasso in my smothered cabbage (gotta get or make more), but them boneless smoked ham hocks are pretty darn tasty. When browning them up I always have to cook extra because my kids gobble them up lol.
