Great ideas guys thank you. I think I remember something from weber showing how to make smoke on propane.
How long does a propane tank last? I guess I should keep an extra?

I use my gas grill almost daily, and usually get 4-6 weeks out of a full tank. Murphy's law states "you will always run out of propane, 2 minutes AFTER you light the fire for your best steaks for company"!!! I keep TWO full extras, even if I don't have a pear burner like some of you guys!!!

They sell gauges you can screw onto the end of the tank that will tell you how much is left. Not sure how accurate it is. You could also weigh the tank. After years of using propane fish fryers etc. I just pick it up and see if it has an slosh to it or how heavy it is. When it gets close I take it to TSC or somewhere similar that will fill them. A backup is a good idea also.

A propane tank only needs to last long enough for you to go out and buy a charcoal or wood grill. If you have to refill or replace it's a problem.

agree with the others, 225 over smoke until 110-120 then sear hot and fast..
If you ever in Fredericksburg the Hill and Vine restaurant does it right. had one Thursday night
