I always thought that Val Kilmer's line was "I'm your huckleberry" and it meant like, let's do it,
I learned that a huckle is the handle on a casket, and that a "huckle bearer" was another name for what we now call a pall bearer, which would have been slang at the time meaning that he would take Ringo to the grave.

But what did “I'm your huckleberry mean?” In the Old West being a huckleberry meant you were game, up for anything. It also meant that you were the one to bring trouble to your opponent. According to Urbandictionary.com “I'm your huckleberry” is the rough equivalent of saying “I'm the man you're looking for.“

I’d go with “I’m the man you’re looking for”

Pretty sure he says it multiple times in the movie and in that instance the Huckle Bearer would have worked but it would have been out of context the other times he says it. Pretty sure it was “I’m your Huckleberry” meaning I’m game let’s do this [censored].

Same here.

At one point in them movie Ringo says something like "aint any of yall got the guts to play for blood" Thats when Doc stands up and says "Im your Huckleberry". In that instance Huckleberry would be much more fitting than Huckle Bearer. Either term would fit but I believe Huckleberry is much more fitting.

Mark Twain wrote about Huckleberry Finn in his book the Adventurers of Tom Sawyer, it was published in 1876, 4 years before Tombstone. Huckleberry Finn was Tom Sawyers best friend, aka backup in the book about Tom Sawyer. Twain's book about Huckleberry Finn, the adventurers of Huckleberry Finn came out later, about the time of the Tombstone movie era. The writer's of the movie Tombstone used a little "historic creativity" by adding in the "I'm your huckleberry".

Val Kilmer’s memoir is called “I’m your Huckleberry.” Pretty sure it was “I’m your Huckleberry” in the movie.

If the screenplay script that's posted online is true and authentic, the scene and lines were as follows...

EXT - OAK GROVE - SUNSET

A clearing by a creek with a cluster of small oaks. Ringo
leans against a tree, sipping from a hip flask, smoking a slim
cheroot. We HEAR the CHIMING spurs approach. Ringo looks up
as the tall silhouette of his enemy emerges from the shadows
of the thicket.
