I made up a batch and it turned out really well. My wife found it to be just a tad too hot for her taste, but I can fix that quite easily by reducing the number of peppers I render down. Thanks so much for sharing your recipe with us!

Look up some of the traditional New Mexico green sauce recipes. Basically a Hatch green chili mix. You can use the canned Hatch chilies, a little onion, garlic, salt and pepper. Chop a small onion, sauté it, add chopped green chilies, garlic and some beef or chicken stock. If you want it thick like a gravy, add some corn starch when sautéing the onion, like making a gravy.

I love Hatch Chilis. I never tried them until 7 or 8 years ago during a dove hunt. One of the guys at the hunt lives in New Mexico and brought some roasted, and steaming in a Zip Lock. Good Lord they were delicious. Been hooked since.

i just added the tomatillos to the pot, waiting for them to turn red. Thank you Skinner, this will be my second batch. The family loves this stuff my kids call it " The Skinner Sauce".

They had the typical jalapeño heat. I really think I’m gonna tweak this recipe to my liking. I just can’t pinpoint what I wanna do to change it up yet. Bullfrog, I made up another batch and this time added some charred Hatch chilis. They gave me that touch of smokiness and changed the taste profile just enough so that you could tell right away that it was a whole different animal from the green sauce. Love 'em both.

Taqueria Arandas here in Houston makes a awesome green sauce, I like how I never know how hot its going to be. Just like many of you sure do, I always over do it and become miserable after eating too much of it. At the end of the day it's totally worth it.
