My brother & I were sitting around going crazy & decided it was a good time to make a trip to deer camp & do some BBQ'ng & drinking. We took along a side of deer ribs from my 2020 So. Tx, 5-1/2 yr old buck for our dinner. Seemed appropriate even though we were in the Hill Country. Came out great!

Marinated overnight with fajita seasoning then flopped on wood burner pit.

Crisped & cooked through on both sides.

Separated & sealed up in a foil pan with a good amount of homemade sauce to let steam. Filled our glasses & toured the pasture for 2 hours. Meat was falling off the bone when we returned.

Nothing like a "Fred Flinstone" sized rib served with pintos & potato salad. I've actually seen hunter throw the ribs from their deer away!

I'd bet keeping the ribs is much more the exception than the rule. We always save them, though I will say i have never smoked them they just go into burger/sausage. Ill have to give this a try it looks outstanding.

Looks good, but the space consideration vs yield would have me skipping it. We just clean them of all meat, and add to burger pile. Same for elk.

I do the same, they either go to the burger or sausage pile. I have saved and cooked them when freezer room allowed.

Looks like you left the loin on those ribs, there aint much meat below that on our little hill country deer. Mostly used for varmint bait.

I freaked out my sons buddy when I went to the shed and got the skilsaw after we had boned out a buck. He asked what are you going to do with that, while laughing uncontrollably, I said" puttin ribs on the Weber tomorrow, if you're after 6:30, you missed it". He never threw away another rib set to this day.
