Chisholm Trail or Smitty's is where the locals go but are polar opposites.
Chisholm Trail for sit down or take home meal with all the trimmings and Smitty's for just the meat.
A take home family pack at Chisholm is a lot of groceries for 2-3 people and we usually have leftovers and eat good for at least one additional day.
Most locals leave the other two for the "Boutique BBQ crowd" from out of town or eat there at off hours to avoid them.

One of the family members of Chisholm Trail operates SanMarcos BBQ. They now have a second location in the old Fuscak location on IH35.

Seems most places are a product of hype. There is fantastic Q in almost every city in Texas. just gotta look around.

There wasn't fantastic bbq in Houston until the last 10 years or so, it was always just alright or good enough to get your fix.

Going through downtown Seguin Saturday morning there was a line to get in a BBQ place named the Burnt Bean.

Ive eaten at most of the bbq joints in the area over the years. Never found anything objectionable at any of them. That said if you put a little effort into it you can do the same or better on your backyard patio sipping the beer of your choice and not paying $20-$30+ a pound for it.

Good bbq is good bbq its not like they have some magic bbq dust they put on it.

This may sound crazy, especially with me being such of a foodie, but I have never eaten at ANY of the popular bbq restaurants in Texas. Blacks, City Market, Salt Lick, none of them. I always just cook my own lol.
