Looking for a recipe, going to make my first batch of deer sausage with probably a 60-40 deer/pork mix. Thanks in advance!

Zack's Spice Company in Deer Park has the best seasoning i have found/used for smoked sausage. Your deer/pork mix should be ok as long as the pork has a good amount of fat.

OK, here's a couple that are pretty good. This is based on 1 LB of meat, scale up from there or write back; my spreadsheet auto-scales the measurements. The Tablespoon/Teaspoon are approximate measures. Sorry for the screenshots, this is the only way to preserve the format

It has been about 45 years since we first made sausage. This was our easy way is to look up recipes that you like. Find a few recipes that look like they have the "basic" spice ingredients that you prefer. Then mix up a small batch of EACH of the spice mixes you picked. Grind up a pork roast and divide the meat in to small amounts and try each batch of spices. This gives you the opportunity to test both the spice mix, and the amount of spice used per pound.

Keep a notes on each mix as to ingredients, amounts and the amount of spice mix used per pound.

I’ve made over 100 pounds this year using this recipe. All made from 100% wild hog.

Copycat Jimmy Dean Breakfast Sausage

For Sage Flavor Breakfast Sausage

You’ll Need:
16 ounces ground pork
1 teaspoon salt
1/4 teaspoon Garlic Salt
1/2 teaspoon dried parsley
3/4 teaspoon ground sage
1/4 teaspoon fresh coarse ground black pepper
1/4 teaspoon dried thyme
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon ground coriander
1/4 teaspoon msg (*Optional, but this is what they use)
1/8 teaspoon Oregano

Hot Breakfast sausage

You’ll Need:
16 ounces ground pork
1 teaspoon salt
1/2 teaspoon cayenne pepper (or more, depending on how hot you want it!)
1/4 teaspoon rubbed sage
1/4 teaspoon fresh coarse ground black pepper
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon coriander
1/4 teaspoon msg (*Optional, but this is what they use)

Maple breakfast sausage

You’ll Need:
16 ounces ground pork
3 tablespoons maple syrup
1 teaspoon salt
1/2 teaspoon msg (*Optional, but this is what they use)
