It already quit kicking, its too done!
Ive had black an blue and sometimes the black is too much like eating charcoal for me, but i like my steak still trying to escape. Never had that reaction to it. I really like the cool blue center the best. I can get very close to this on my home grill, but I have a hard time trusting how the meat was handled prior to purchase. It’s also worlds better with a dry aged steak. I may be wrong but the outside layer protects the inside. As long as it has been marginally kept cold i dont worry about it and eat it as rare as i like. You may be right. I have no idea. I attempted a Black & Blue today. Straight from store to grill, still very cold, came out amazing. It got a little warmer inside than I was shooting for, but I hadn’t ate in 24+ hours and had been up 28 hours at the time I was cooking.
