Comals can be either cast iron or clay. Every Mexican American or Mexican National I've ever known/worked with/cooked with in South or West Tx calls round cast iron griddles comals, and have for generations. Nowadays clay comals are usually just used for nostalgic purposes, but will certainly cook. Kinda like clay bean pots, which I think are really cool. My Cousin's wife & FIL still cook beans the old/traditional Mexican way in a clay bean pot over a bed of coals.

Anyway, the description of a comal vs griddle is a regional thing. FME the further North you go they are never called comals, they're round griddles. Go South and they are comals.

That's a tuff one, except for my Magnalites mine are all cast iron and I think all of them are my favorites. grin

So do I, and always use my cast iron on it. I wish I had gas service, though.

My wife will not live in a house without gas.

When we were looking a few years back we liked a total electric house. I tried to convince her the new induction electric stones were different, she was having none of it. Funny how some people are wink

Have any of you ever learn to flip food in a pan? Today was cheeseburger night. The store was out of hash brown patties so I bough a great big frozen bag of the crumbles. They tasted about the same but broke apart when I plated them. I'll finish the bag but go back to the patties. I guess you could say that I'm a jack of all trades but a master of none.

my grandkids like to watch me flip eggs and try to not break the yoke. I am probably about 80% on not break them. I had a little challenge while we were out at the lake, and I did 5 eggs at once and didn't break any of the yokes (all 5 in the skillet at one time)
